¡Salud Sundays!

Happy Sunday all!
A delicious tapa that is super easy to make and ever yummier is, Tortilla Espinola (Spanish Tortilla).

6 medium Potatoes, diced
2 small Onions, coarsely chopped
1/2 teaspoon Salt, 1/2 teaspoon Pepper
2 tablespoons sunflower oil, plus 2 tablespoons
7 Eggs
1/4 cup Milk
Olive Oil


1. In a medium bowl mix the potatoes, onions, and 1/2 teaspoon salt by hand. Heat 2 tablespoons of the oil in a large non-stick frying pan.

2. Fry the potatoes and onions on low heat and cover with a lid for 5 minutes to let them soften. Turn up the heat for another 5 minutes until golden brown.

3. Remove from the stove and drain off any excess oil.

4. Meanwhile break the eggs into a medium bowl. Add the remaining salt and milk and whisk vigorously until frothy. Add the potatoes and onions to the eggs and mix until fully integrated.

5. Clean the frying pan and return to stove.
Heat the remaining 2 tablespoons of oil on a high heat and pour in the mixture, moving it around in the pan to help the tortilla to rise.
6. Fry until golden brown, stirring occasionally until it has set.

7. Turn down the heat to low to allow the inside to cook. After a few minutes, turn up the heat in order to brown the tortilla.
When it's cooked place a large plate over the frying pan and flip the tortilla onto it. Return to the pan and fry the other side until golden brown.

*** You can add yummy veggies like spinach, dried tomatoes, red & green bell peppers, green onions, mushrooms, olives, corn, and so on. To add some meats you can add dices of ham (jamón Serrano) and bacon as well to mix it up! ***

Favorite Fridays

Friday is here!
Today's Favorite is my beloved crunchy snack, Veggie Chips.




"veggie chips, veggie chips, I love my veggie chips" -see- I even made my own song I sing while I'm eating them they are that good!
You can purchase them at any store that has them in stock any Trader Joe's food stores in the chips aisle for about $3.98. They are light puff chip snacks that are like an air crisp. You can pair them with different dips like ranch, fresh salsa, herb mix, and so on or eat them alone.
My boyfriend and I eat them all the time when I shop at Trader Joe's. There are three different "flavors" of chips: Tomato, Potato, and Vegetable. I BELIEVE that you can taste them, but Mati thinks they taste all the same just with different coloring. Recently after munching on a bag I suprised him with after getting out of work late, he agrees the three variations of taste :) haha. My fave is the Tomato one NOM NOM NOM.
If you want to stop snacking on Doritos, Cheetos, y Fritos, try these light snacks that can hit your snack spot and a lot less artery clogging healthier.

Happy New Year!



   Welcome 2012! I'm soo happy it is a new year. 2011 was a happy year overall, but the last few months left of 2011 was just killing me. If all I need is to believe that this new year will bring better things & opportunities for myself, then I'll take it.

   I've been really busy without internet for a week or so and haven't been able to post like I wanted! Mati moved out of his house on the 1st and is now at his parents house. I miss him already. Knowing him, he will get aggitated living with his parents & younger brothers and want to leave. His next option is Argentina in February for a month visit, then if he gets the call, he will move to Germany for a job in March. I guess it is what it is... but I can't help to shed tears everytime I think about it.
In my mind, 2012 is going to be rough. Not only because it MIGHT be the zombie apocalypse end of the world, but there is so much going on in my head that I want to accomplish but have little patience. I continue to hope and pray that this new year will have better opportunities and things for me to come. But I think my way of thinking is to "not expect anything, that way you will never be disappointed". So here we go 2012. Hopefully we will all remain for 2013 and so on. I just think the Mayans ran out of stone characters for their 2012 section of the calendar... HEY! Remember in Y2K (2000) when everyone thought the world would end because all the digital clocks in the world weren't programmed for the millenium?!? YEAH.
